Development of new microbiomes to enhance fermentations of interest in improved winemaking – Microwine

Acabamos de realizar la justificación del Hito 2 de nuestro Proyecto de I + D que realizamos para el CDTI (Centro para de Desarrollo Tecnológico y la innovación) denominado: “Desarrollo de nuevos microbiomas para potenciar fermentaciones de interés en vinificaciones mejoradas – Microwine”. En resumen, con este proyecto lo que vamos a conseguir es identificar los microorganismos de interés existentes en nuestros viñedos más antiguos y de mejor calidad, que son los responsables de caracterizar en parte tanto a nuestro terruño como a nuestros mejores vinos, para poder conservarlos y multiplicarlos, y posteriormente aplicarnos a nuestros viñedos jóvenes, para reproducir en ellos el microbioma de los viñedos viejos. Con ello conseguiremos trasmitir las características propias del “terroir” de viñedos antiguos sobre producciones de viñedos jóvenes para producir vinos mejorados en sus cualidades organolépticas y sensoriales.

En este Hito 2 han sido testadas numerosas levaduras y bacterias de interés, las cuales han sido sometidas a diferentes pruebas de conservación y crecimiento en diferentes medios. Así mismo hemos realizado vinificaciones con estos microorganismos y se ha comprobado que mejoran los parámetros de calidad de los vinos.

En el Hito el 3 que es el último, realizaremos aplicaciones de los microorganismos seleccionados a mayor escala, tanto en campo como en bodega, para posteriormente poder cerciorar la mejora de los distintos parámetros enológicos con respecto a los vinos procedentes de las parcelas control.
