Bodegas Yuntero launches the new wine on the market: Epílogo Chardonnay 2018. With Designation of Origin La Mancha, it is a young white that is aged in mixed French and American oak barrels, and that has been made 100% with grapes of the Chardonnay variety, from the vineyards of the Sierra de Siles (Ciudad Real).
Bodegas Yuntero will carry out the commercial launch of the new Epilogue Chardonnay during the celebration of the tenth edition of the National Wine Fair, FENAVIN 2019, which is held from May 7 to 9 at the Ciudad Real Fair Pavilion, an exhibition that Bodegas Yuntero has been attending since its inauguration in 2001. In this edition, the Bodegas Yuntero stand is located in the Virgilio Pavilion (C / 13, booth 18). More than 18,000 international buyers are expected to attend the fair this year.
Epilogue Chardonnay 2018
To prepare the white Epílogo Chardonnay 2018, Bodegas Yuntero has selected the best grapes of this variety, collected during the night harvest to preserve the fruit in its greatest integrity and freshness, of vineyards located in the Sierra de Siles (Ciudad Real). In the winery, the yolk must has been obtained by direct bleeding, without any type of pressure, for subsequent fermentation at a controlled temperature (16ºC). The wine has had a small stay in the barrel in order to obtain a perfect balance between fruit and wood.
The result is a bright yellow, clean white with very attractive golden reflections. On the nose, it is very complex, with tropical aromas of the Chardonnay variety (pineapple, mango) and a floral component, well intermixed with toasted and smoky notes provided by the aging in the barrel.
The new Chardonnay from Bodegas Yuntero is marketed under the Epílogo brand, a seal that also includes the white wines Epílogo Sauvignon Blanc and Epílogo Viognier, as well as the red Epílogo Roble.

Variety: 100% Chardonnay
Elaboration: To make this wine, the best grapes from our Chardonnay variety vineyards, located in the Sierra de Siles, have been selected at the optimal moment of maturation. The harvest is carried out at night in order to harvest at the coolest temperature possible and also obtain greater integrity of the grapes and thus avoid undesirable oxidation.
In the winery, a small film maceration is carried out in order to extract a greater amount of aromas. For this wine we are left only with the yolk must obtained by direct bleeding of the must without any type of pressure. This must is cleaned by static cold settling for 30 hours at about 8-10ºC, obtaining a very clean must, which is what we ferment.
The fermentation of this must takes place at a controlled temperature of around 16ºC, thus enhancing the extraction of the characteristic aromas of the Chardonnay variety. Once the fermentation is in its final phase, the wine is racked into mixed French and American oak barrels. The wine is subjected to a short stay in the barrel on its lees, controlling the wine at all times to obtain the perfect balance between fruit and wood. The aim with this wine has not been to obtain a “wooden white wine”, but rather to give a simple touch that provides more longevity and structure to the wine, without ever forgetting the fruit.
Tasting note: The wine has a bright, clean yellow color with very attractive golden reflections. On the nose, it is a very complex wine where the tropical notes of the variety (pineapple, mango) and a floral component appear, well intermixed with toasted bakery and smoked notes typical of the stay in the barrel. In the mouth, it is an unctuous and tasty wine, but at the same time light and soft, with a very balanced acidity and a very pleasant long aftertaste with toasted memories.
Food Pairing: Ideal for rice, cooked and grilled seafood, some pickles and blue fish.
Operating temperature: 10ºC.
