The new Epílogo Viognier wine from Bodegas Yuntero has been made and bottled under the “La Mancha” Denomination of Origin, with the Viognier (90%) and Moscatel de Gran Menudo (10%) grape varieties.
The Viognier grape is originally from Condrieu (Rhône, France). It is a variety that is not widespread and scarce on the market. The pests, the difficulty of its cultivation and the production problems that occurred during the last century due to war conflicts, almost caused its extinction. In the mid-sixties there were less than eight hectares of land left with this variety. Recovered, today it is mainly grown in France, Australia, California and New Zealand, and very aromatic white wines are produced from it.
The complexity of its cultivation – it is very susceptible to spring frosts and pests –, added to low production and late maturation, make its price high.
Epilogue Viognier 2015, a wine with great structure and persistence
The white Epilogue Viognier is lemony yellow in color, very bright, with some very attractive greenish flashes. On the nose, it is a very complex wine, with a varietal aroma with a floral tone and hints of magician and pineapple. It has a small perfumed touch that makes it special due to the small percentage of muscat grapes. In the mouth, it is a very voluminous, glyceric, soft and dense wine, with a very pleasant aftertaste. It is a wine with great structure and persistence that invites you to continue drinking.
It is ideal to accompany rice, seafood, some sausages and blue fish. A service temperature of between 6 and 8º C is recommended.
Elaboration process
The new wine from Bodegas Yuntero has a cold pre-fermentation maceration of the grapes for 8 hours, to selectively extract the aromas located in the grape skins. Subsequently, without any type of pressing, a direct bleeding of the yolk must is carried out, which is then cleaned by static racking at about 7º C. With this, a practically transparent must is obtained. This process can last up to two days, as these are two varieties as complex as Viognier and Moscatel. Finally, the must is fermented at a controlled temperature (approximately 15º C) for 20 days.

With this wine, Bodegas Yuntero is committed to expanding the range of wines under the Epílogo brand, as they are wines that have been widely accepted in the national and international market, a fact that has been reflected in the different awards and recognitions received in competitions in the sector. winegrowing.
In this way, there are now two white wines made under the Bodegas Yuntero Epílogo brand: the recently released Epílogo Viognier, and the Epílogo Blanco, which is made with the Sauvignion Blanc (90%) and Moscatel (90%) grapes. Under the same brand, the winery also markets the red Epílogo Roble (65% Tempranillo and 35% Merlot).
