The Cooperativa Jesús del Perdón-Bodegas Yuntero has obtained the silver Bacchus in the X International Bacchus Wine Competition 2012. This competition, organized by the Spanish Union of Tasters, has been consolidated in its already 10 editions as the most important quality contest of how many are celebrated in Spain. 90 Tasters from all over the world have chosen the best wines in blind tasting from more than 1,500 samples from 27 countries.
This award comes to endorse the permanent commitment to quality that this winery-cooperative develops in all its processes, backed by the different certifications of quality standards: ISO, BRC, IFS and NOP.
The award-winning wine Yuntero Macabeo 2011, is made up of 85% of the Macabeo variety and 15% of Sauvignon Blanc, Harvest carried out in the first days of September, with mechanized collection at night, to proceed to a light maceration of the grape mass to favor the extraction of aromatic compounds from the skins. Extraction of all the yolk must by direct bleeding, without using any type of pressure on the mass of the grape. This yolk must is cleaned by static desleeving in cold and at a temperature of 8ºC. For this, isothermal tanks are used in which the must is subjected to decantation for 24-36 hours. Subsequently, it is fermented, controlling its temperature between 14-16ºC, fermentation lasting about 20 days. Low temperatures and the clarity with which the must is fermented are the key to obtaining greater aromatic expressiveness.
The tasting note of the Yuntero Macabeo 2011 wine, in its visual phase is bright, pale yellow with greenish reflections. In the olfactory phase of great aromatic intensity, where we find aromas of green fruits (green apple) and floral aromas of white flowers. In the taste phase it is a fresh, slightly acidic wine, it also provides a refreshing sensation due to the small natural carbonic point that it has, the palate is long and persistent.
