Yuntero Macabeo

Grape varieties: 85% Macabeo, 15% Sauvignon Blanc.
 
Harvest: early September.
 
Production: Mechanized night harvesting, moving on to a slight cold maceration and subsequent clearing of free-run juice for 48 hr at temperatures of 6-8° C so as not to start off fermentation. Subsequent fermentation of cleared free-run juice with very little turbidity at temperatures of 14-16° C, fermentation thereby lasting about 20 days.
 
Tasting notes: Steely pale yellow with greenish, clean, clear and bright tones. Floral, fruity aromas combine on the nose. The small contribution of the Sauvignon Blanc even gives it a somewhat sweet profile. In general, the blend of these two varieties gives it a very interesting aromatic complexity. In the mouth, it is intense, frank and lively, showing great harmony amongst its components. It is full-mouthed with a long finish.
