For the elaboration of this wine, the grapes of the Macabeo variety are selected, collected by night harvest. In this way we get the grape to reach a low temperature warehouse, and thus preserve the aromas of the variety. The must of the grape is extracted by draining in self -vacious deposit, and then ferments at controlled temperature (around 12ºC), in order to extract many more aromas and nuances. The fermentation process is slow and careful, and stops when we get to the perfect balance between alcohol, sugars and acidity in wine.
With a low alcoholic content (5.5% vol.), A fine and persistent bubble, and intense aromas to green apple, pear and anisted notes, this sweet and balanced wine is ideal to enjoy very cold, only or accompanied by desserts, desserts, desserts, Soft cheeses and bittersweet Asian dishes.
