Sparkling
Composition: Verdejo – Moscatel.
Graduation: 5.5% vol
Preparation: To prepare this must, the Tempranillo variety grapes are selected, harvested first thing in the morning. In this way we ensure that the grapes arrive at the winery at a low temperature, and thus preserve the aromas of the Tempranillo variety. The must is extracted from the grapes by draining in a self-emptying tank with minimal contact between the grape skin and the must, so that the extraction of color is minimal. It is then fermented at a controlled temperature (around 12ºC), to be able to extract many more aromas and nuances. The fermentation process is slow and careful, and stops when we manage to reach the perfect balance between alcohol, sugars and acidity in the wine.
Visual Phase: Pale pink color, very clean.
Olfactory Phase: The nose has a floral profile, with a touch of roses and aromas of strawberries, blackberries and raspberries.
Taste Phase: It is powerful in the mouth, with sweet flavors and a touch of acidity and carbon that balances the wine and gives it freshness and
youth. After drinking, it leaves a very pleasant aftertaste.
Pairing: Perfect to combine with appetizers, cheeses and seafood.
Temperature: We recommend serving it between 6 and 8ºC.
